This DeCal course introduces topics in eating disorders that are underrepresented and under-discussed in traditional healthcare education, with an emphasis on nutrition and dietetics curricula. There has always been a heavy focus on the social factors that contribute to an eating disorder but there are many biological and psychological factors that are at play. The lack of education given to nutrition students surrounding these factors have created significant barriers in the access and treatment of eating disorders. The material covered in this DeCal will cover critical gaps in knowledge that all aspiring eating disorder providers should be aware of and pursue further education in.
We want to emphasize that this course offers a brief introduction to topics in eating disorders that have been underrepresented and aims to raise awareness of them. It does not confer expertise on eating disorders, and the facilitators do not present themselves as experts. We are a group of students passionate about expanding understanding of eating disorders, and we strongly encourage all students to seek further professional training in these areas.
Most of the assignments in the course will be completed during the scheduled class time and homework is kept at a minimum. Students will engage with five readings paired with question sets, write three short reflection papers, take two unlimited-attempt and unlimited-time open-note online quizzes, and participate in a mandatory final debate with BOTH speaking and non-speaking roles, allowing every student to contribute in a comfortable manner.
The most exciting feature of this course are the expert guest speakers who will share insights on compelling topics, including the neurochemistry of psychiatric conditions, evidence-based therapeutic approaches to nutritional counseling, and medical nutrition therapy.
Grading in this course is very lenient. Students who complete all assignments to the best of their ability and in accordance with the rubric can expect to do very well. Our goal is to spark your interest in these topics and teach you something new about eating disorders.
Attendance is required. Students are allowed one absence where points will not be deducted for missing class. 5 points will be deducted for each additional absence. Accommodations can be made for special circumstances.
